Family owned small business with 15 years of experience being in the service industry.  They have a environmentally conscious approach to running their business, such as using bio-degradable products, and LED lighting, etc…  The Fishers location that we were at had both able and booth seating with a trendy restaurant all located in a (newer?) strip mall.

1.    Stuffed Portobello Mushroom - Sliced portobello caps, sausage, ham, bacon, red onions and mozzarella (Signature Pan, 8", $14.70).

Spicy Hawaiian (Signature Pan, 8 Inch, $14.70)

2.    Spicy Hawaiian - Pineapple, spicy capicola ham, spicy Thai-chili sauce and mozzarella. Topped with fresh cilantro (Signature Pan, 8", $14.70).

3.    Quattro Formaggio - Olive oil, garlic, asiago, mozzarella, parmesan and ricotta cheeses. Topped with fresh parsley (Hand Tossed, 8", $13.70).

 

The Verdict

Sauce: Sauce was a little too sweet for my likings, but it was well distributed. 

Stuffed Portobello Mushroom (Signature Pan, 8 Inch, $14.70)

Cheese:  The cheese was pretty light, and left more to be desired.  I LOVED the cheese around the crust on the pans, but it should have been more.  Lacked flavor.

Crust: Firm bready crust was a great asset to each pie that we ordered. 

Toppings: Tasty toppings, lots of flavor.

 

Final thoughts:  Next time, I wanted to try the pear pizza.  This place has two locations, so you know they are doing something right!  Lots of unique pizzas with a larger Italian menu.  Will definitely return!

Attempt #113 - Gino's East (Dubuque, IA)

Alongside the once hustling factories in downtown Dubuque Iowa, Gino’s East among a slew of other businesses has brought new life to the long crumbling warehouse/factory district. Inside the venue is a comedy club downstairs with doors opening at 7pm.  A event center for wedding banquets, a few boutique shops, a bar with a outdoor seating courtyard, and Backpocket brewing with a downstairs beer+arcade, beercade!  Trendy lofts are above along with other fancy restaurants, including Kevin Scharpf’s Brazen  Open Kitchen.  Kevin was in season 16 of Top Chef. The establishment had plenty of seating, booth, high, and low top seating.

  1. Gino’s Supreme – Pepperoni or Italian sausage, onions, green peppers, mushrooms (Deep Dish 12” $31.50.
  2. Italian Beef - Italian beef, sweet peppers and giardiniera (Deep Dish 12” $31.50).

 

 

The Verdict

Supreme 12" Deep Dish $31.50

Sauce: Sauce was well prepared and had a traditional marina flavour.

Cheese: The cheese often slid off the slices.  Great consistency overall not too heavy, but plenty cheesy.

Crust: Soggy pieces that couldn’t hold the slices.  A basic flour crust, with an excellent bready rim.

Toppings: Tasty toppings, lots of flavor.  The spicy Italian beef really exceeded my expectations. Authentic space to vegetables as well.

Final thoughts:  I enjoyed the Italian beef the best.  I hate to say it but compared to Lou Malnati’s, I think Lou has this place beat.  However, if you’re looking for a authentic Chicago style chain to try, this may be your closest option geographically.

Vesta is a Mediterranean inspired restaurant serving dishes from France, Spain, Greece, Italy and North Africa with an American flair. Vesta seats more than 150 guests, including a private dining area with presentation equipment for meetings. During the summer months, Vesta seats 80 guests for dining and drinks on the patio in front of the Hyatt. High chairs are available, as well as table and bar seating.

The Verdict

Sauce: Sauce was tasty and of good quality.

Cheese: Some of the pizza’s lacked cheese (Margherita), while others had excess, so not very consistent.

Crust: A thin crust but it had lots of soggy pieces.

Toppings: I loved the variety of toppings, but I’d like to see more gourmet pizza options, particularly with the Italian meats.

Meat-za, $16

 

Final thoughts:  I enjoyed the Meat-za, and the Mushroom lover was truly unique.  I can’t say I’ve had anything quite like it! Be warned, it is VERY rich with that goat cheese.

Located in the Czech Village Hospoda boasts that all pizzas are made with a hand-tossed, Neapolitan style crust with fresh dough made in house daily and cooked in our custom-built French wood-fired oven.  The restraint has several low and high-top tables, as well as a bar.   It occupies two business buildings with a wall knocked out in between them to account for more seating.

  1. Children’s 10” Cheese.  ($8).
  2. Children’s 10” Pepperoni.  ($8).
  3. Margherita - A wood-fired oven classic that remains timeless as pizza pie itself! Neapolitan style pizza with house tomato sauce, fresh mozzarella topped with basil leaves. ($13).
  4. White Clam - Our claim to fame and first pizza we made, the white clam includes Little Neck Clams from the North Atlantic with an olive oil and garlic base topped with finely shredded Pecorino cheese.  ($16).
  5. Big Kahuna Inspired by the big island pizza, we added our own spin to this Hawaiian favorite. A tomato base pizza topped with pineapple and dry mozzarella; we then take it up a notch by adding prosciutto slices and Gorgonzola Bleu Cheese crumbles for a new, unique blend of flavors. Feeling spicy, add Calabrian oil for that extra zip! ($13).

  6. Pete the Heat - Our wood-fired pizza oven burns bright for Pete the Heat. For our favorite foodie and Cedar Rapidian Zeitgeist, this pizza is built on a foundation of our pizza sauce with house-made Calabrian chili oil topped with dry and fresh mozzarella, and Soppressata and finished with a light dusting of Pecorino cheese. ($16).
  7. Pistachio Pesto - Our fresh, made in-house pistachio pesto is a flavorful base for a pizza and topped with fresh and dry mozzarella, Berkshire Sausage and finished with local Ebert honey to combine into a unique pizza experience. ($16).
  8. Lasagna – Where our love of pizza and pasta comes together for this Hospoda signature pie. We start with a tomato base and add Berkshire Sausage, fresh and dry mozzarella with house-made whipped ricotta and sweet red peppers, finished with garlic and basil. ($16).
  9. The Kolbe – A nod to an everyday man inspired with integrity, style, and community--built to share and celebrate! Our house-made tomato sauce with Berkshire Sausage and Pancetta, topped with dry mozzarella and fresh cremini mushrooms, finished with pine nuts and basil. ($16).

 

The Verdict

Sauce: Sauce was tasty and of good quality.

Cheese: Several participants commented on how the cheese was great and wanted MORE of it on the pizzas.

Crust: A thin crust for a brick fired oven, however it was often soggy.

Aroma pizza is located inside New BO (Bohemia) City Market.  It is open Thursday – Sunday only, and closes at 8pm on Thursday-Friday, 6pm Saturday, and 4pm Sunday.  They also serve drinks and some small snacks there as well.  Since it in located in a booth, near the other end of the facility, there are tables and chairs. With a nearby bar, and other food vendors present, it contains a large variety of foods.  One thing to note, is that the vendors at this facility do not have a standalone retail location, so often they are just getting their business started.

  4. Prosciutto - Our house red sauce, garlic, ground proscuitto, and four cheeses (hard mozzarella, soft mozzarella, pecorino romano, and parmiagiano reggiano). ($13).
  5. Pepperoni – Our house red sauce, garlic, pepperoni, and four cheeses (hard mozzarella, soft mozzarella, pecorino romano, and parmagiano reggiano) make this our number one selling pizza. ($12).

  6. Cheese – Our house red sauce, four cheeses (hard mozzarella, soft mozzarella, pecorino romano, and parmigiano reggiano) and EVOO. Vegetarian. ($11).
  7. Margherita - Our house red sauce, garlic, tomatoes, and four cheeses (hard mozzarella, soft mozzarella, pecorino romano, and parmigiano reggiano). Finished with EVOO and fresh basil. ($12).
  8. Prosciutto – Our house red sauce, garlic, ground proscuitto, and four cheeses (hard mozzarella, soft mozzarella, pecorino romano, and parmiagiano reggiano). ($13).
  9. Sausage - Our house red sauce, garlic, local Sausage Foundry mild Italian sausage, and four cheeses (hard mozzarella, soft mozzarella, pecorino romano, and parmigiano reggiano). ($12).

 

The Verdict

Sauce: Slightly sweet on the red sauce.  Nothing else stood out.

Cheese: A little light on cheese with some of the ones we ordered.  I could use some more of that.

Margherita, $12

Crust: A thin crust for a brick fired oven.  I would have loved to see a larger size option for the pizzas in the future.

Toppings: The ingredients were of good quality and they tasted great.  However, they often slide off the slices, so it was hard to eat at times.

 

Final Comments/Considerations:  

Pizza was great on an empty stomach!  The crust was cited by several as the best part, chewy yet firm.  An adult could easily get a whole pizza for dinner, or split one with two children.
